The Marine Stewardship Council has endorsed wild Alaskan salmon
as a sustainable resource. Fresh troll caught king salmon are available July
through December. Fresh troll cohos are available from May through
September.
Troll caught salmon is available headed and gutted and in fillets.

PINK SALMON Alaskan salmon plays a major role in the lifestyle
and communities of Alaska. Salmon fishing is a family affair.

| SEINE CAUGHT ALASKA SOCKEYE, COHO, CHUM AND PINK
SALMON Seine caught salmon are so fresh, they’re still alive
and kicking when they are delivered to the tender.
Fresh seine salmon are available from July through September. |

| ALASKA WILD SALMON CAVIAR E. C. Phillips &
Son, Inc. has a caviar selection created from chum, pink and
king salmon roe.
With a gorgeous color and delicious taste, salmon caviar
lends itself to a variety of different recipes (beautiful cream
fraise, crackers, capers and red onions).

versatile in a variety of innovative recipes (lox, caviar, fresh

| ALASKAN GEODUCKS AND SEA CUCUMBERS Geoducks
and sea cucumbers are harvested by divers in the icy waters of
Southeast Alaska. Geoducks and sea cucumbers are a sustainable
fishery.
The geoduck, a versatile bivalve, is wonderful in a variety
of recipes, from ceviche to chowder, sushi to sautés. The neck
(ceviche, sushi, chowder) and body meat ( sautéed, batayaki),
are frozen in individual portions.
Geoducks are available fresh from
October to January. They are available frozen during the rest
of the year while supplies last.
Sea cucumber has a sweet white meat, similar to calamari and
can be prepared in the same manner.

| ALASKA HALIBUT FILLETS AND BLACK COD Alaska
halibut is a versatile whitefish, easy and delicious in many
recipes.
Alaska black cod is a wonderful alternative to the
environmentally sensitive Chilean sea bass.
Fresh products are available during the longline season from
March through November. Frozen products are available year
round. |

| ALASKAN ROCKFISH Rockfish are longlined during
December and January.
There is a high demand for fresh product.
Alaska Fish and Game rigorously manages this fishery to ensure

| ALASKA SPOT SHRIMP Alaskan shrimp is sweet and
succulent, you can throw your deveiner out. Alaska’s glacial
waters and natural environment create a taste that is
unforgettable. Alaskan shrimp are delicious in many recipes,
boiled in beer, sautéed or barbecued, the options are endless.
Alaska shrimp are available fresh from October to February. |
